Buy rather sweet and firm/creamy fruit (soy) yogurt which comes in little containers, about 1/2 cup each.
Get some really cheap little plastic spoons (like small egg spoons or children spoons) from somewhere.
Cut a small opening in the top of each cup (just a sharp line, not a round hole).
Stick one little spoon in each yogurt container and put all of them (standing upwards, so the yogurt does not run out) into the freezer or the freezing section of your fridge.
Wait a few hours - no churning or checking necessary - and enjoy refreshing (soy) yogurt ice cream :-) The plastic container comes off easily after you warm it with your hands for a minute or just let it stand outside for a few minutes, so the surface of the ice cream melts a little and does not stick.
I am just doing exactly that. It is getting warmer and all I could think of today was ice cream. I especially love yogurt ice cream, but cannot digest dairy and soy yogurt ice cream is a very rare luxury item. Thus I came up with this basic recipe, it’s cheap and quickly made, a real life saver :-D It works also with dairy yogurt!
